I’m Alive!

Is anybody out there? I have been MIA for almost the whole summer and let me say, I am not proud of it! Time has just flown by and while my precious blog was always in the back of mind and on my to-do list, nothing ever seemed to come to fruition.

To give you the whirlwind quick recap of my summer so far, we moved from our cozy downtown apartment to a house in the suburbs at the end of June. We had 2 family moves (in addition to our own) to help out with in June, which left us frantically throwing our belongings into boxes and setting everything up for the new house before time ran out.

After our move, we took two weeks off to receive furniture and aIMG_0056ppliance deliveries, have everything installed, and to unpack and settle in. I don’t even know where the time went between then and now, it all feels like an insanely exciting and unbelievable blur. Finally the dust is starting to settle, (well, not really since we literally live in the middle of a dusty construction site) and we are beginning to get back to our normal routine. There is one minor difference though my friends, I now have a BEAUTIFUL kitchen to play with.

I have made a few things in my new kitchen, mostly for birthdays or celebrations, but in the rush of everything, most of it has gone un-photographed.

We hosted our housewarming party this past weekend and it was really our first test of preparing food for a large group of people. We had a lot of fun and are IMG_0247.JPG (2)very lucky to be surrounded by great friends and family. One thing that stood out at the party for me was these Peanut Butter Cup Cupcakes. The peanut butter-chocolate flavour combo is always a winner, and let’s just say, I wasn’t complaining when there were a few of these babies leftover after the party! I used my favourite chocolate cake recipe adapted for mini cupcakes and I whipped up a peanut butter frosting which was TO DIE FOR. It is very rich and creamy, but light and fluffy at the same time. I will not look any further, this is my peanut butter frosting recipe forever. I have already hinted that a cake slathered in this frosting would be my birthday dream….mmm. I promise I will be back with a REAL recipe soon! I am working on delicious things 🙂

Peanut Butter Frosting

  • 1 cup icing sugar
  • 1 cup creamy peanut butter
  • 5 tbsp unsalted butter, at room temperature
  • 3/4 tsp vanilla
  • 1/4 tsp kosher salt
  • 1/3 cup heavy cream

Combine first five ingredients in a bowl and beat with an electric mixer on medium low speed until creamy. Add the heavy cream and beat on high speed until light and fluffy. Makes enough to frost about 24 mini cupcakes

I have been making some changes around the blog, and I am very excited about what is to come! I have some new recipes to share, and I will be updating very soon! I made the transfer to wordpress after reading many many posts from other bloggers who recommend it over blogger. Let’s hope it works out, and I think you will find that the commenting is much easier here (hint hint, i like comments!) Take a look around, and let me know what you think. Any suggestions are welcome. I will be adding more features later on as I figure everything out, stay with me!

My Daily Reads

Ok so I am in baking withdrawl these days, it feels like it has been forever since I have made something that fills my apartment with the sweet sweet smells of butter and sugar. I have recently restarted my relationship with Goodlife Fitness, which means that there has been a slightly strict intake of food in this household! BOOO….it’s really no fun. In all honesty, I really do like going to the gym and everything good that comes with it, but I also really do like eating cookies all day long! I will try to start incorporating some healthy baking recipes into my blog which can be equally as delicious.

Anyways, I really have nothing new to share, so I thought I would take the time to showcase some of my favourite food blogs. A few years ago I didn’t even know that this kind of thing existed, nor would I think to go to a blog for a recipe. Now most of my time spent online is spent reading food blogs, bookmarking recipes and dreaming about food!

The thing that I like about recipes from blogs is that you know that it has been tested, and the blogger gives their input into the recipe. Sometimes when I pick up a recipe book, I have no idea how the recipe will actually come out, or if its really as good as it looks. So, less talking and more reading blogs!!!

1. Brown Eyed Baker: This site has beautiful pictures and lots of pb and chocolate recipes which is always a hit with me!

2. How Sweet It Is: There is a lot of humour here, and delicious recipes. She also includes a lot of dinner recipes which are always needed!

3. Annie’s Eats: This is a new one that I have been looking at lately and it is obvious that it is full of tested recipes. I recently made the panko crusted baked chicken strips from here and despite setting off the smoke detector, they were amazing!

4. Smitten Kitchen: This blog is very professional and the recipes may not always be ‘everyday’ stuff, but it is very well respected and I like reading it.

I honestly have at least 10 more blogs bookmarked that I check out every few days, but these are the ones that I go to EVERY day. It’s like a sickness. I especially like them because for the most part, they update everyday with a new recipe. Which is something I would love to do, but then I would really have too many treats lying around!

I will be making something for a get together this weekend, so check back later to see how it turned out! 🙂
